Healthy: Quinoa Salad
- Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Instructions:
- Rinse quinoa under cold water. In a medium saucepan, bring water and quinoa to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until water is absorbed and quinoa is cooked.
- In a large bowl, combine cooked quinoa, bell pepper, cucumber, red onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over quinoa mixture and toss to coat. Serve chilled.
