Quinoa Salad

  1. Healthy: Quinoa Salad
    • Ingredients:
      • 1 cup quinoa
      • 2 cups water
      • 1 red bell pepper, diced
      • 1 cucumber, diced
      • 1/2 red onion, diced
      • 1/4 cup chopped fresh parsley
      • 1/4 cup chopped fresh mint
      • 3 tablespoons olive oil
      • 2 tablespoons lemon juice
      • Salt and pepper to taste
    • Instructions:
      1. Rinse quinoa under cold water. In a medium saucepan, bring water and quinoa to a boil.
      2. Reduce heat, cover, and simmer for 15-20 minutes until water is absorbed and quinoa is cooked.
      3. In a large bowl, combine cooked quinoa, bell pepper, cucumber, red onion, parsley, and mint.
      4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
      5. Pour dressing over quinoa mixture and toss to coat. Serve chilled.
